The Good Food Academy teaches you not only through demonstration but also through the process of consuming that which we create. So if you are looking to learn your way around the kitchen as well as enjoy a freshly cooked meal, The Good Food Academy is the place for you.

Our classes have been designed around specific themes/topics. They can be based on a particular cuisine such as Italian, Chinese, Moroccan etc, or on a specific culinary interest like BBQ, Healthy, Gluten free etc. The recipes have been carefully selected, revised & adapted to suit seasonal availability of the ingredients as well as satisfy the strictest kashrut requirements.

  • Appreciation of seasonality – Using ingredients at their best and as an avoidance of dullness, associated with habitual use of the same ingredients over & over.
  • Organization in the kitchen – Prioritizing, what can be done ahead of time and what requires last minute preparation?
  • Shabbat nuance. Selecting dishes that can be served cold with the minimum compromise on quality
  • Understanding natural affinity (marriage) of various ingredients
  • International culinary influence – Traditional ingredients and how they interrelate with each other (fusion cuisine)
  • Appreciation of quality ingredients & their appropriate use
  • Glimpse into Biomechanics – How food substance behaves on the molecular level and how cooking techniques effect it?

How to get the most out of this course

In Class

  1. Watch - Every stage of food preparation, including appearance & color of ingredients, technique & presentation.
  2. Listen – Make it a sensual experience by paying attention to the sound of food, being cooked (it is a part of memorization) and of course to the chef’s instructions & comments.
  3. Take short notes – Taking notes is one of the best ways to remember what one has learned.
  4. Smell - Food is not only about taste, the aroma that food emits is just as important (it is a sensual experience after all).
  5. Taste – Always taste your food. The flavor of food – salty, sour, sweet, bitter, umami (savory)
  6. Feel - The texture of food in the mouth.

At home

Recreate what you have learned. Cooking is all about trial and error, the more you do it the more fluent your body will become working in the kitchen and the sharper your culinary senses will become.
